Grilled Veggie Burgers with Lemon and Rosemary

What do you need:

  • 1 lemon grated
  • 1/2 onion finely chopped
  • 4 garlic cloves finely chopped
  • 2 cups cannellini beans, drained and mashed
  • 2 cups artichoke hearts, drained and chopped
  • 1 cup quick oatmeal
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

In a large bowl, combine the lemon zest, garlic, crushed cannellini beans, artichoke, rosemary, salt, and pepper. Sauté the onion (without oil) in a skillet until golden brown and add to the bean and artichoke mixture. In a blender, blend the oatmeal a few times, then add it to the mixture. With clean hands, mix all the ingredients well and form patties. Arrange on a tray lined with parchment paper, cover and refrigerate for 1 hour. When done, cook on a preheated grill over medium high heat until cooked through. Serve with your choice of bread and seasonings.

All-Green Grilled Vegetable Salad

What do you need:

  • 2 zucchini, cut into strips (1/4 inch thick)
  • 1 bunch asparagus, stems removed
  • 1 bunch broccollini, stems trimmed
  • 2 cups fresh spinach
  • 3 tablespoons olive oil, divided
  • 2 tablespoons minced fresh mint
  • 1 tablespoon minced shallots
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt to taste

Mix the zucchini, asparagus, and broccoli in 1 tablespoon of olive oil and season with salt. Cook on a preheated grill (on a pan) over medium high heat, turning once, until grill marks appear or when cooked through. Place the roasted vegetables in a serving bowl along with the spinach, mint, shallots, Dijon mustard, apple cider vinegar, and remaining olive oil. Mix everything together. Serve immediately.

Creamy Grilled Corn with Herbs and Spices

What do you need:

  • 8 ears of corn, shelled
  • 1 clove garlic
  • 1/2 cup cilantro, chopped (divided)
  • 1/2 cup raw cashews, soaked overnight
  • 1/2 cup of water
  • 1/4 cup fresh lime juice
  • 1/4 cup nutritional yeast
  • 1 tablespoon Dijon mustard
  • 1 teaspoon chili powder
  • 1/4 teaspoon black pepper

To make the creamy sauce, combine the garlic, 1/4 cup coriander, cashews, water, lemon juice, yeast, Dijon mustard, and black pepper in a blender or food processor. Blend until mixture is smooth and creamy. Grill the corn on a preheated grill over medium high heat for about 10 minutes or until cooked through. To serve, place the grilled corn on a plate and pour the creamy sauce all over it. Top with the remaining cilantro and sprinkle with black pepper.
