Liver is a powerful iron-rich food but many people don’t know how to prepare it well. Here are some quick and easy liver ideas for someone struggling with an iron deficiency.
liver and bacon: Use one pound of beef liver, sliced, without the membrane. Place the liver in a saucepan and top each piece of liver with one or two strips of bacon. Add about a half cup of water to the pan and bake at 325 degrees for about 45 minutes. Serve with baked potatoes and a vegetable.
liver with tomatoes: Slice one pound of liver and place on a baking sheet. Top each slice of liver with a strip of bacon, sliced mushrooms, sliced heirloom tomatoes, and a thinly sliced piece of onion. Add a little hot water to the pan and bake for about 45 minutes at 350 degrees. Remove the onion and serve on a bed of quinoa sprinkled with finely grated hard white cheese.
liver cakes: These liver patties work well on a bed of fresh vegetables. Place one pound of liver in a food processor along with several slices of bacon. Add about two cups of breadcrumbs, a quarter cup of evaporated milk, and salt and pepper. Mix the ingredients well. Shape mixture into flat cakes and fry in bacon fat until well browned on both sides. Arrange on a bed of vegetables, top with tomato sauce and serve with bacon.
Liver paste on toast: To make the liver paste, cook half a pound of liver along with half an onion (sliced), a bay leaf, a clove, and soup stock to cover. Cook until liver is tender. Cool the liver in the liquid and then drain the liquid. Run the liver through a food processor twice. Continue mixing until liver is a smooth paste, adding melted butter and soup stock to moisten. Serve on toast made with your favorite bread.
Chicken liver with poached eggs: For one person, clean two chicken livers and cut them into pieces. Dust the livers with flour, salt and pepper. Brown the livers in 2 tablespoons of butter in a frying pan. At the same time, shape two pieces of bread round. Toast the bread on each side. Poach two eggs. Arrange chicken livers on toast, eggs on chicken livers, and top with a high-quality tomato sauce. Garnish with fresh chives.
